End of school year, Elisabeth's tan, raised garden beds, King Kong Acai bowl copycat

 The last week of school is always fun for the elementary kids because we have field day and yearbook signing and usually a day where they show all the other grades the dance they came up with in music class. But for my kids at the Jr High and High School, going for yearbook signing, watching movies and cleaning desks is torture, so they mostly don't go during that last week after Memorial day. 

The last week of school for us workroom aides is always busy as we're taking old bulletin boards and things down and putting up new ones, and we're getting copies and workbooks ready for the following year. Here's me and Mindee working on a project for our Principal. 

Jane and Penny cuddling. Jane will often lay on Penny's bed with her which they both seem to find comforting. 

Sweet tan lines sista! Elisabeth works a 7am-4pm job doing Mosquito abatement which means she's on a bike all day, in the sun, with her bike shorts and her uniform t-shirt so she gets pretty dark in some areas. She also has a sweet tan line across her chin from her bike helmet strap. 

We've been meaning to clear out the weeds from this area by the shed for years, since we built the shed, so that we could put in garden beds. We finally got to it during the first week of June! 

And here we are building our 2 tall garden beds (so hopefully penny will stay out of them). 
I went hiking with Shauna and the ladies to Grandeur Peak East Trail...It's 6.4 miles and we did it in 3 hrs 15 min. It feels so good to be outdoors and in the mountains! It's such a beautiful way to start the day.

I've made many Kalalea Juice Hale, Acai bowl copycats since our trip to Kauai in May. It's hard to get it just right, especially since I don't have things like dried rose petals, but I was able to find goji berries and Macadamia nut butter and I love having those in my bowls. I also always add protein powder to make it more of a meal. Here's a recipe I like. 


King Kong Acai Bowl copycat:
1 Acai frozen packet 
1/4 c vanilla almond milk, unsweetened
1 scoop vanilla protein powder (I like CSE)
50 grams banana
1 Tbsp PB crunch granola
1 Tsp goji berries
1/2 Tbsp Macadamia Nut Butter blend 
1/2 Tbsp Macadamia nuts, chopped 
1 tsp peanut butter
optional: 1/2 Tbsp mini chocolate chips
