Swiss Enchiladas and other Creations

Stephany asked me to teach her some cake decorating techniques. Elisabeth's birthday is coming up soon so I decided to make her cakes, cut the tops off, use those for Stephany to practice on and then freeze Elisabeth's cakes for her party next week. Stephany came up with a cute BYU/flower cake. Elisabeth learned some too and practiced along side Stephany.

I taught Stephany how to make green smoothies. She was a little nervous to drink one in the beginning, but now she really likes them! Mission accomplished :). She also loves the pink smoothie!

Stephany taught me how to make 'Swiss Enchiladas'. They were very yummy, and easy so we'll definitely be making these again. Here is the recipe:
Swiss Enchiladas:
6 roma tomatoes
1/2 chili serrano
1 clove garlic
1/3 of a white onion
salt to taste (1-2 tsp)
2 c cheddar/or monterey jack cheese, grated
16-18 corn tortillas
optional: cooked chicken, shredded

Combine first 4 ingredients in blender and blend until smooth. Set aside this salsa mixture. Stack the tortillas and warm them in microwave to soften(about 30 seconds). Fill with a little chicken or cheese, roll and place in 9x13 pan, with the folded side down. Repeat until you fill the pan. Pour the salsa mixture over top and sprinkle with cheese. Bake for 10 minutes at 35o degrees or until cheese is melted. Serve warm. Can top with sour cream.
